 Grandma’s Taco Soup 
 Not fussy, this recipe can easily be made with ingrediants straight from your pantry and freezer. A favorite for family gatherings and Sunday dinners, one batch feeds 6-8 healthy appetites.  
 Makes:  6-8 adult servings   
  Prep time:  enough time to thaw your ground beef  
 Cook time:  60 minutes  
 Ingredients:   
 2 lbs Ranch Wives Ground Beef (thawed) 
 2 cans pinto beans 
 2 cans petite diced tomatoes 
  2 cans Rotel tomatoes with chili peppers 
 1 to 2 cans whole kernel corn 
 1 to 2 packages of Taco Seasoning (2 packages will be abundantly seasoned and 1 package, mild) 
 1 package original ranch dry mix 
 1 large onion diced 
 salt and pepper to taste 
      Instructions:  
 Brown ground beef in a large soup pot or Dutch oven 
 Add onion and let sweat for about 3-5 minutes 
 Rinse & drain beans and corn before adding to the pot. Add all remaining ingredients. Add one can of water. 
 Simmer for 45 minutes to an hour. Alternatively, may cook in slow cooker on low for 8 hours & down to warm until serving 
 Serve with garnishes of sour cream, cheddar cheese, sliced green onion, chopped cilantro & corn chips

 Pasta e Fagioli 
 Gather a group for the large batch of hearty and filling soup. Great for Sunday dinners with the family. 
 Makes:   10-12 servings   
  Prep time:  10 minutes  
 Cook time:  1.5 hrs  
 Ingredients:   
 1 lb Ranch Wives ground beef 
 1 small onion, diced 
 2 garlic cloves, minced 
  2 stalk celery, chopped 
 2 large carrots, chopped 
 2 (14.5oz) cans petite diced tomatoes 
 1 (15oz) can Great Northern beans (with liquid) 
 1 (15oz) can red kidney beans (with liquid) 
 1 (15oz) can tomato sauce 
 1 TBS white vinegar 
 1 tsp oregano 
 1 tso basil 
 1&1/2 tsp salt 
 1/2 tsp pepper 
 1/2 tsp thyme 
 1/2 lb ditali pasta 
      Instructions:  
 In a large Dutch oven or soup pot, brown ground beef 
 Add onion, carrot, celery & garlic. Sauté for about 10-12 minutes or until vegetables are tender 
 Add remaining ingredients (except pasta) and simmer for one hour –stir occasionally 
 With 10-15 minutes remaining –separately cook the pasta until al dente, drain & add to soup (you could try just adding to the soup and cooking until done)  
 Simmer for 5 additional minutes and then serve with freshly grated parmesan cheese

 Summer Steak Salad 
 From the kitchen of Katie Sue Cooper, this salad is one of our favorites. Topped with a delicious, ranch raised steak, it is the perfect ending to a warm summer day.  
 Makes:  5-6 servings   
  Prep time:  10 minutes  
 Cook time:  15 minutes  
 Ingredients:   
 Ranch Wives’Top Sirloin Steak 
 1 bunch of fresh spinach 
 1 bunch of pea shoots 
  3 garlic scapes  
 corn bread, for topping 
 shaved cheese, for topping (parmesan, asiago & romano pair nicely) 
 1/4 cup grape seed oil (or similar cooking oil such as olive oil or avacodo oil) 
 1 TBS BBQ sauce 
 1 TBS water 
 1 TBS balsamic vinegar  
 2 TBS ranch dressing  
      Instructions:  
 Preheat grill. Generously salt & pepper steak. Grill steak to liking then let rest while preparing the salad. 
 In a large bowl, tear spinach and pea shoots. Dice garlic scapes (do not use bulb) and add to bowl. 
 Whisk together salad dressing: grape seed oil, BBQ sauce, water, balsamic vinegar and ranch dressing. 
 Add dressing to salad and toss to coat all greens. 
 Thinly slice steak (against the grain). 
 Plate salad and top with steak, corn bread cubes and sprinkle with cheese.

 Hearty Beef & Broccoli 
 This spin on a traditional Chinese recipe will make an inexpensive cut of steak into a weeknight favorite. 
 Makes:  4 adult servings  
  Prep time:  10 minutes  
 Cook time:  30 minutes  
 Ingredients:   
 2 lbs any Ranch Wives steak, cut against the grain into 1/3 inch strips 
 1/2 cup Beef Stock 
 2 TBS minced garlic 
  4 cups broccoli florets 
  2 cups fresh spinach (optional) 
 Cooking Oil 
 Corn Starch (2 tsp for sauce and more for coating steak strips) 
 1/2 cup low sodium soy sauce 
 2 TBS brown sugar 
      Instructions:  
 Toss steak strips in a dusting of corn starch 
 Heat cooking oil in a deep frying pan or wok. Brown steak strips in batches and set aside 
 Cook garlic in the pan until fragrant (about one minute), then add broccoli and beef broth. Then when no one is looking toss in the spinach. Let simmer until broccoli starts to get tender. About 10 minutes 
 Meanwhile, make the sauce by whisking the soy sauce, 2 tps corn starch and brown sugar in a small bowl 
 Once broccoli is tender, add reserved steak strips and soy sauce mixture to the pan. Stir and let simmer for another 8-10 minutes or until sauce has thickened slightly 
 Serve with rice or soba noodles

 Meat Loaf 
 Foolproof and family approved, this meat loaf is always a favorite. 
 Makes:  About 4 servings  
  Prep time:  20  
 Cook time:  60  
 Ingredients:   
 1 lb. Ranch Wives ground beef (thawed) 
 1/2 cup rolled oats 
 1/2 cup chopped onion 
 14.5 oz petite diced tomatoes (without juice) 
 1 egg beaten 
 1 & 1/4 tsp salt 
 1/4 tsp ground pepper 
 1/3 cup Ketchup 
 2 Tbs brown sugar 
 1 Tbs whole grain mustard  
      Instructions:  
 Pre-heat oven to 375º 
 Mix together loaf ingredients: ground beef, oats, onion, tomatoes, egg, s&p 
 Form into a loaf and place into pan. 
 Mix together topping ingredients in a small bowl: Ketchup, brown sugar & mustard, and spread evenly over loaf. 
 Bake for about an hour or until internal temp reads 160º
